LATIN LUVA CAKE



Chef’s Line                 melting cake batter                                      2#
Monarch                     ground cinnamon                                         1T
Monarch                     ground cayenne pepper                                1T
Glenview Farms         40% heavy cream                                        10 oz
CVF                            lime, zest only                                              2ea


Method: whip the cream and lime zest together until stiff peaks and set aside for later. Bring the melting cake batter to room temperature mix in the cinnamon and cayenne pepper. Scoop 3oz of batter into a ramekin, bake 350 degree for 6 minutes remove from oven let cool 10 minutes, top with whip cream and serve.

Yield: 10 servings
