CAJUN CATFISH TACO



1ea            Harbor Banks           5-7oz catfish filet, cut into strips
1tsp           Monarch                   Cajun spice blend
2ea            El Pasado                  6’ flour tortilla shell
1oz            CVF                           shredded lettuce
1oz            Glenview Farms        shredded cheddar cheese
½ oz          Monarch                    sliced black olives
1oz           El Pasado                    mild salsa


Method: season catfish with Cajun spice and bake 350 degree until done. Warm tortilla shells place half the catfish on shell top with lettuce, cheese, olives and salsa. Maybe garnish with sour cream.
