BAYOU CAESAR


1ea            Harbor Banks                5-7oz catfish fillet
½ tsp         Monarch                        Cajun spice
3oz            CVF                               chopped romaine lettuce
1oz            Monarch                        hot banana pepper rings
1oz            Monarch                         croutons
1oz            I/Grn                              fire roasted red peppers. Diced
1oz            Monarch                         sliced black olives
½ oz          Roseli                             shredded Romano cheese
2oz            Monarch                         parmesan & peppercorn dressing


Method: season catfish with Cajun spice and pan sear until done. Combine remaining ingredients and toss. Place mixed salad on plate and place the catfish on top.

Yield: 1 serving
